A slightly spicy, tangy, and sweet avocado salsa, playfully studded with chunks of colorful tomato, pineapple, jalapeño, and mango.
Yesterday was the most B-E-A-utiful day!! After a bit of a gray and chilly morning, I came home from running errands to find the sun out and the ocean breeze blowing like crazy.
I’m pretty sure Florida forgot that it was the last day of April, which has to have been one of the hottest I can remember.
The high was, I think, in the low 70s, and absolutely perfect weather to turn off the AC, open all the windows in the house, and air it out one last time before the 90s soon return.
Is it weird that I gauge my homebody happiness level based on whether I can open my windows for the day? There’s nothing better to me than being able to lounge around with a fresh spring breeze blowing through the house, with music playing, and good smells coming out of the kitchen.
I desperately need a house with more windows.
Our sad little neglected hammock even got some attention from Vader and I. After checking on my newest out-of-the-kitchen project (but still directly related), our raised garden beds, I plopped down with my Kindle and a bowl of this ridiculously colorful Tropical Avocado Salsa, and proceeded to soak up a little spring sunshine.
Two dips with avocado as the star in one week? What the heck?!
Summer’s coming, folks, and I just can’t help myself. I get in the mood for cocktail drinkin’ and chip dippin’ when it’s hot out. It sure beats turning on the oven, right?
Not to mention how popular it will be at all the fun Cinco de Mayo celebrations happening in a few days!

This salsa recipe was inspired by a similar one I did a few months back and entered a contest with. Which I obviously didn’t win, since you’d have heard about it.
I have a hard time keeping exciting news to myself, what can I say.
Even with no prizes, this fancy, fruity avocado salsa is a winner. I used the (relatively small amount of) leftovers to top some chicken breasts I grilled up for dinner, and talk about delicious! Not a new idea at all, but wonderfully fresh and oh so summery!
This stuff has potential…to show up in our home multiple times over the next few months.
I’ll have my spoon at the ready.
- 2 small Hass avocados, halved, pitted, and diced
- 1 large mango, diced (about 1 cup)
- 1 cup fresh pineapple, diced
- ¼ cup red onion, diced
- ½ cup tomato, diced
- 1 jalapeno pepper, diced
- ¼ cup cilantro, chopped
- 2 Tablespoons olive oil
- ¼ cup fresh lime juice (1 large or 2 small limes)
- Sprinkle of sea salt to taste
- Add all ingredients in a large bowl.
- Stir gently to combine, being careful not to mash the avocado.
- Serve with tortilla chips, in tacos, on chicken or fish, with a spoon...
